Preheat oven to 400°F.

Lay squash circles on an ungreased baking sheet with 1–2 cloves of garlic on each circle. Drizzle with oil, then sprinkle with herbes de Provence, salt, and pepper.

Bake 45 minutes or until just beginning to blister. Allow to cool 10 minutes before serving.

DELICATA SQUASH

Delicata squash, as its name implies, is the most delicate of all the squash. It does well in warm weather and is easy to grow, but it is less sturdy than its heartier cousins like butternut or acorn squash. Baked in the oven, the delicata squash has an exquisite, nutty flavor. The rind is delicious and crunchy as well when baked.
